Toddy, also referred to as 'kallu' in India, is an alcoholic beverage made from sap collected from various types of palm trees. The Gond tribes that inhabit parts of Madhya Pradesh, eastern Maharashtra, Chhattisgarh, northern Andhra Pradesh, and Western Orissa, traditionally collect, distribute, and sell 'kallu'. A sour beverage made from fermented sap (but not as strong as wine), toddy is supposed to be drunk at the end of the day of fermentation as it gets more and more acidic with each passing day. In the villages, where people would drink toddy at the end of the working day, it would often be enjoyed at the bottom of the same palm trees from which it was tapped and brought down. The Gond serve 'kallu' from a container referred to as a 'binki'. Different types of toddy were served in different seasons.
